Kitchen Manager
Job Description
The Kitchen Manager is responsible for the exceptional execution of the BOH by the entire Kitchen Staff. They are responsible for overseeing department inventory, margin, labor budgets, pricing integrity, and merchandising standards. The Kitchen Manager will ensure the highest level of execution in regards to ordering, receiving, unloading, storage, rotation, merchandising and preparation of food.
Qualifications
- Ability to model and provide exceptional guest service.
- Must have a love of natural, organic and specialty food.
- Must be a Passionate Chef, with creative ideas.
- Ability to lead by example and set clear expectations.
- Able to oversee and train in all areas of kitchen management including proper rotation and labeling, and food safety and sanitation.
- Responsible for using solid cooking fundamentals and techniques.
- Able to fill-in where needed to ensure service, food safety and sanitation standards.
- Able to ensure that all equipment is kept clean and in excellent working condition.
- Knowledge of proper rotation principals.
- Able to close the kitchen properly, utilizing the closing checklist.
- Able to assist with checking refrigeration points to ensure all temp logs are filled out properly.
- Able to stand or walk for extended periods of time, up to 4 hours without a break.
- Must have exceptional organizational skills.
- Must be able to bend and lift loads, not to exceed 67 lbs. unassisted.
- Must be able to push and pull carts weighing up to 100 lbs. unassisted.
Responsibilities
- Model and provide exceptional guest service.
- Responsible for achieving 90% or higher average on all Mystery shop scores.
- Will train, mentor and coach Team Members to succeed.
- Must achieve and maintain budgeted comps and margins.
- Must oversee any catering.
- Assign Prep lists and work with team to complete prep list.
- Must meet all deadlines in terms of invoices, purchase journals, scheduling, etc.
- Wear a cut glove.
- Maintain a clean and sanitized workstation.
- Maintain all compliance logs.
- Maintain quality and consistency of food produced.
- Holds Team accountable.
- Ensure all food safety procedures are properly followed.
- If needed, create and work through order guides to properly order for department.
- Manage inventory on a weekly and monthly basis.
- Work with Executive Chef on menus, new items, recipe building and costing of items.
- Maintain pars while ordering.
